Recipe: Herb-Spiced Tuna Steaks

When you're recovering from an injury, one thing your muscles definitely need to help them rebuild and grow strong is some high-quality protein. Here's a quick, flavorful recipe for tuna steaks that are high in protein and low in fat.
Preheat grill, grill pan, or skillet. Rinse tuna and pat dry. On a cutting board, pile parsley, rosemary, lemon zest, garlic, salt, and pepper together and mince until combined. Drizzle both sides of tuna steaks with oil and rub herb mix into fish. Set aside for 5 minutes to let flavors marry.
Grill steaks 2 minutes on each side for rare or 5 minutes on each side for well done. Cut each steak into two pieces. Makes 4 servings.
Preparation Time: 15 minutes
Cooking Time: 4 to 10 minutes

Workout Log
TurboFire - 55 EZ
Today I wanted to mix things up and instead of drinking my Shakeology for breakfast I had some cereal and then later I ate lunch. By the time of my afternoon workout I thought I had pretty good energy, WRONG!!! I had to modify this workout most of the time but I still made it through the whole thing.
So, today's lesson is that I must drink my Shakeology in the morning if I want to make it through TurboFire in the afternoon.
Then I had a glass of what I call Banana Mocha Shakeology:
I think this is my new favorite recipe, it is simply delicious. Who needs Starbucks when you can make yourself one of these? certainly not me!

Here's a summertime treat the whole family can enjoy. Cut back on the excess fat and sugar of traditional desserts without sacrificing flavor. Plus it's easy to prepare!
Peel banana. Cut a 1-inch slice from center, wrap, and refrigerate. Place milk, sugar or honey, vanilla, and rest of banana in blender; blend at high speed until mixture is smooth. Scoop mixture out of blender into medium bowl, using spatula or scraper to help get it all out. Fold yogurt into banana mixture. Cover bowl and chill for at least 45 minutes in refrigerator. When chilled, spoon mousse into 4 dessert dishes. Cut pre-refrigerated banana segment into four equal 1/4-inch slices and garnish each serving with a vertical banana slice. Makes 4 servings.
Preparation Time: 15 minutes (plus 45 minutes chilling in fridge)

Workout Log
Just finished my workout a couple of hours ago. I took a shower and made myself a chocolate Shakeology with 1/2 frozen banana, 6 ice cubes, 2 1/2 cups of water and some vanilla extract. I’m in heaven.
TurboFire - HIIT 25
Still a challenge and I think I’m going to have to take it down a notch (another notch) because my knees, shins and calves are hurting me a bit. I would much rather prevent an injury than having to deal with it later. I DON’T DO PAIN, HOSPITALS, SURGERIES, NEEDLES OR ANYTHING LIKE THAT.
TurboFire - Tone 30
I like this workout but I can’t wait for my TF/CLX hybrid to start so I can substitute this and Sculpt 30 with some awesome ChaLEAN Extreme weight lifting workouts. Sorry but I’m not a fan of the exercise bands and I keep better form with dumbbells.

We're havin' a heat wave, a tropical heat wave . . . but that's no excuse to get your exercise chasing the ice cream truck. Here's a frosty treat that takes advantage of the great fruits that are in season right now, and is also super-easy to make. You don't even need an ice cream maker.
Choose any combination of fruit you like: peaches, bananas, pears, strawberries, mangos, raspberries, etc. (Avoid using tart citrus like lemon or grapefruit with dairy milk, as this mixture can curdle. The same is true of fresh pineapple and dairy milk.) Put ingredients in blender—if you like, add one serving of Shakeology for extra nutrition and flavor—and process until smooth. Pour into a container, cover, and freeze until firm (at least an hour or two). Scoop into dishes and, if desired, garnish each serving with a sliced strawberry. Makes 4 servings.

Ouch! my butt and thighs were on fire but I love love love this workout. And Leandro is the cutest “it’s all about the angles” :)

Turbo Fire - HIIT 25
Mother effer! this class is kicking my ass. I was doing so well in the HIIT workouts the past two months, I was really thinking I got them down and then BAM!! month 3 comes and HIIT 25 hiits me across the face. It’s 8 fire drills, one less than the 9 in HIIT 15 which I pretty much mastered already and yet this class KILLS ME!
Sculpt 30
I hate using the exercise bands but I’m still pushing myself because that’s how I will see results.
P90X - Ab Ripper X
I had some extra time so I did this just for fun. It never gets easier but I was actually able to get through it with modifications. I’m still deciding if I’ll start a TurboFire/P90X or a TurboFire/Chalean Extreme hybrid next month.

Ingredients:
Pour milk into large bowl. Add dry pudding mix & Shakeology. Beat with wire whisk 2 min. or until well blended.
Spoon pudding mixture into crust. Top with banana slices
Refrigerate 3 hours or until set.

Recipe: Fresh Pea Soup
Ever wonder why you rarely see fresh peas in the produce section of your supermarket? That's because the harvest season for fresh peas is exceptionally short, which is why they're usually found either frozen or canned. But if you hurry now, you can get fresh shelling peas from your local farmers' market before the season ends. Here's a delicious summer recipe for fresh pea soup.
Remove peas from pods (you should have about 2-1/4 cups). Place empty pea pods, water, bay leaves, and thyme in large saucepan. Bring to a boil, reduce heat, cover, and simmer briskly for 15 minutes. Strain through sieve, pressing on solids to extract as much liquid as possible. Reserve broth and discard solids. (You should have at least 3 cups of broth.)
Heat oil in large saucepan over medium heat. Add onion, carrot, celery, and parsley and sautƩ until vegetables soften, about 6 minutes. Add 3 cups broth (reserve any extra to add later if needed) and simmer for 5 minutes to blend flavors. Add peas and cook just until tender, about 3 to 4 minutes.
Puree soup in batches in blender until perfectly smooth, adding extra hot pea broth or hot water to thin if desired. Return to saucepan and add salt to taste. Ladle soup into individual bowls. Garnish with chives and serve immediately. Makes 4 servings.

Too Broke for Shakeology. Let’s Put This Theory to the Test.

You really can. There is really no excuse. I felt disturbed that I had left out Shakeology from my suggested meal plan, especially given the fact that many of the foods we eat today (particularly our chicken/fish/meat) are of such poor quality. It makes sense that Shakeology would make up for some of the nutrient deficient foods we consume as a society. But, the question remains: Can you afford it?
If I left it out of my meal plan, then somewhere in my mind I was saying, “No, there is little room for it in a tight budget.” However, somehow that just didn’t jive with me. Let’s do the math together and you decide. The cost of Shakeology on autoship (you get free shipping) is $119.99. Plus tax, say around $126, for one month’s supply (1 serving a day for 30 days). Each shake comes out to about $4.20. The coach price for Shakeology on autoship is $89.99 or around $96 total. Each serving comes out to $3.20. Too much you say? Not if you are using Shakeology as a meal replacement, which, by the way, will help you lose weight.
Remember: Subjects in a 90-Day study lost an average of 10lbs when they replaced just one meal per day with Shakeology. The cost of an average lunch at a restaurant or take-out: $6 to $9. Plus, even Subway sandwiches which are reputably low-cal average 380 to 560 calories. Shakeology has 140 calories, less than 1 gram of fat per serving, annnnnnd it is truly nutrient rich.
The cost of an average take out or restaurant dinner: $10 & up to be sure. The cost of a home-cooked lunch or dinner: 6-8 ounces of chicken = $2.00 (and we are talking low-grade chicken), veggies= $1 (frozen veggies are really okay! hurray!) and 1 sweet potato = from .5 to $1.00. Total= about $3.4. Conclusion: You are spending about $3-4 on a home-cooked meal, the same amount that you would spend on Shakeology. So what is the big fuss about then? I think our resistance has to do more with our thinking than our actual ability to afford Shakeology, regardless of budget.

You really can. There is really no excuse. I felt disturbed that I had left out Shakeology from my suggested meal plan, especially given the fact that many of the foods we eat today (particularly our chicken/fish/meat) are of such poor quality. It makes sense that Shakeology would make up for some of the nutrient deficient foods we consume as a society. But, the question remains: Can you afford it?
If I left it out of my meal plan, then somewhere in my mind I was saying, “No, there is little room for it in a tight budget.” However, somehow that just didn’t jive with me. Let’s do the math together and you decide. The cost of Shakeology on autoship (you get free shipping) is $119.99. Plus tax, say around $126, for one month’s supply (1 serving a day for 30 days). Each shake comes out to about $4.20. The coach price for Shakeology on autoship is $89.99 or around $96 total. Each serving comes out to $3.20. Too much you say? Not if you are using Shakeology as a meal replacement, which, by the way, will help you lose weight.
Remember: Subjects in a 90-Day study lost an average of 10lbs when they replaced just one meal per day with Shakeology. The cost of an average lunch at a restaurant or take-out: $6 to $9. I think our resistance has to do more with our thinking than our actual ability to afford Shakeology, regardless of budget.

Recipe: Chocolate Glazed Carrot Cake Shakeology
For the carrot cake lovers:
1 scoop chocolate Shakeology
1/2 cup water
1/2 cup unsweetened almond milk
4 oz baby food carrots (or baby steamed carrots)
1/2 tsp cinnamon
1/2 tsp vanilla extract
1/2 cup frozen pineapple
ice to taste
Mix all ingredients in a blender until smooth and enjoy!

Healthy Appetizer: Costa Rican Ceviche
As a proud Costa Rican I feel is my honor and duty to share one of our most delicious and healthiest dishes. Ceviche de corvina can be served as a light lunch or appetizer, but personally, I could eat it 3 times a day, everyday. That's how much I like it.
Ingredients
1 lb. boneless fish, preferably White Sea Bass (Corvina)*
1 1/2 cups finely chopped onion
1 1/3 cups fresh lemon juice
1/2 cup finely chopped celery
1/4 cup finely chopped fresh cilantro
salt to taste
1/2 hot pepper finely minced (optional)
Directions
Cut the corvina (sea bass) into bite-size pieces and place in a glass bowl or container of at least 2 inches high. Add all the other ingredients, mixing well. The lemon juice should cover the fish.
Cover with plastic wrap and place in the refrigerator. Allow one day for fish to cook in the lemon juice and onions. Serve with crackers or saltines.
*Those of you who are not fans of fish can use chickpeas as a substitute, and benefit from all the vegetarian protein, fiber and minerals present in these delicious legumes.

These chocolate Shakeology no bake cookies are an easy way to create healthy eating habits for our kids without them feeling deprived of the occasional sweet treat.
Ingredients
· 1 cup raw almond butter
· 1 cup organic oatmeal (quick)
· 1/3 to 1/2 cup organic honey (according to desired sweetness)
· 1 cup Chocolate Shakeology
· Medium bowl
Directions
Combine in medium bowl and mix well. Roll into balls (about a heaping teaspoon each).
Optional: Roll in crushed nuts or unsweetened coconut flakes before serving.
Preparation Time: 10 minutes
Makes 10 cookies.

Recipe: Strawberry Chocolate Shakeology Ice Cream
Today has been a very hot day in my corner of the world, a.k.a New Jersey, and I thought it would be a good idea to share one of my favorite Shakeology ice cream recipes. It takes two minutes to make and I guarantee you will love it.
Strawberry Chocolate Shakeology Ice Cream
Ingredients
8-10 oz water or Almond Milk (Unsweetened)
1 heaping scoop Chocolate Shakeology
1 Cup chopped strawberries
Directions
Combine water or milk in blender and blend
Pour into an ice cream maker
Add strawberries and freeze
