Healthy Sweet Potato Fries


Chili Sweet Potato Batons
Makes 3 servings

Total Time: 25–45 minutes
Prep Time: 5 minutes

Ingredients:
2 large garnet yams, peeled and cut into 1/2-inch-thick lengthwise batons
2–4 Tbsp. extra-virgin olive oil
3 tsp. chili powder blend
Sea salt, to taste

Preparation:
  1. Preheat oven to 400° F.
  2. Place the cut potatoes in a large bowl and drizzle with olive oil to coat.
  3. Season with the chili powder blend and salt.
  4. Using your hands (or a large spoon if you prefer), toss the potatoes around to evenly coat
      with the seasoning.
  5. Spread the potatoes in a single layer on a baking tray lined with parchment paper.
  6. Bake in the oven for about 20 to 30 minutes, turning occasionally until browned and tender.
  7. Let them cool for 5 minutes before serving.

Super Sunday in Philadelphia



My husband and I had the best time yesterday at the Team Beachbody's Super Sunday event in Philadelphia, where us and other 250 coaches got to learn about what's in store for 2014 from this great company that is changing lives everywhere. We also got to hear awesome and inspiring stories from fellow coaches such as a woman named Pam who not too long ago was morbidly obese and confined to a wheelchair, but she decided to make a change and started doing INSANITY from her wheelchair!! And there she was yesterday, rocking our on our live Combat workout, I mean, come on!!! She got an standing ovation and there were quite a few tears in that room. Life-changing stories like Pam's remind us why we are coaches and what an honor it is to be part of this company.

After training and recognition we got to workout with Joel and Jericho from Les Mills COMBAT wooot! it was insanely fun, the energy in that room was through the roof! Those guys sure know how to make fitness FUN.
